Q - If I try to clamp a blade that does not have a flat edge near the spine that is the length of the blade it tilt a little and the angle is off a degree or two per side
A - Try to use 1 clamp on the flat tang / ricasso area of the blade (just in front of the handle), and the other clamp about an inch or so from the tip of the knife. This is the best method of secure clamping.
The clamp on the flat ricasso / tang area will stop and rotation (or "tilt" as you're experiencing), and the second clamp towards the knife tip will stop any flexing while sharpening.
