Do these stones ever need to be "flattened"? Do they require cleaning? If so, what's a good method? Thanks!

No flattening required, they are plated diamonds on a steel plate, mounted on an aluminum backing. It's best used with a diluted dish soap and water solution as lubrication while sharpening, and cleaned with a nylon brush & soap after use. Let them dry properly before storing .
