The hook is a "parking" hook for the horizontal rod to "park" and hold up and away in position so it
doesn't lie on the table or on your knife while swapping stones, inspecting your work or simply taking a break.
The black and orange threaded part is the fine tuning adjuster for dialing in those exact angles you need.
