Q - I've just purchased a Santoku Knive (3 Layers: middle: Hitachi HAP40, HRC 67-68) from Sukenari (JAP).
I guess this is getting to much for my Triangle Sharpmaker, which I used for my Global G-46 with the ultra fine stone + leather stope. It's also difficult to get the 11° angle with the sharp maker.
So I'm looking forward to buy the Edge Pro Apex from you. Guess the Apex 1 is the best, so I can buy the other stones from you. Which ones would you recommend for this hard steel? Which gradations? (I guess till J-5000 should be fine?)
I've seen many stones in the program and different materials:
Diamond
CBN
Aluminium Oxide
Sintered Ceramic
Natural
Semi-Natural.

A - Congratulations on your Sukenaro HAP40 knife! HAP40 is one of the best steels to use as a core in a kitchen knife. You will definitely need a good set of stones to compliment a knife like that. HAP40 steel has a fair amount of Vanadium carbides, which work best when sharpened on Diamond or CBN. Vanadium Carbides are harder than most sharpening stones, so it's best to use an abrasive that suits such carbides.
As far as a sharpener is concerned, I would suggest superior options to an Edge Pro. Have a look at the Hapstone R2, Kazak Model 100, TSProf K03, TSProf Kadet and Leading Edge Sharpening systems. They are all excellent choices.
