What degree undercut should I chose?

Hapstone r2 and if anyone could recommend what degree I should pick. I Mainly sharpen pm2, pm3, etc. occasionally kitchen knives.

A - The 3 degree or 5 degree undercut clamps work very well on many Spyderco full flat ground knives. The 6mm flat (no undercut) clamp would be a good all-round choice.
