You shouldn't need another stone for burr removal after a Venev 800. You can use a loaded strop if needed (grit depending on the steel type and how much polish you want) to polish the edge if you prefer.
Aim for burr minimisation during sharpening, rather than crude burr removal. Remove and minimize the burr during each stone progression until there is nothing left. If you're sharpening a fairly cheap steel that creates stubborn burrs, then simply raise your angle by a degree and do a few light leading edge passes with your final stone at the end of your sharpening.
