Q - Considering a purchase, looks like the Tsprof plate stones are currently the best recommended option, but wanted advice on the Venev URSA set.
A - The Venev Ursa stones are excellent value for money (you get 6 grits with the 3 dual sided stones). They work perfectly fine with the Hapstone RS. They leave a superb edge on any steel. You'll have a far better quality of edge with the Venev Ursa stones than what you would with the TSProf plates. Note that the Ursa stones are narrower than regular stones like the Centaur or Orion stones, so you'll have to be a bit more careful not to roll them while sharpening.
