Stropping surface is very much a personal preference thing.
My personal preference is Kangaroo leather due to the fact that it's very thin and has a nice fine grain.
Some prefer stropping on a hard surface like wood, others prefer bovine leather or cordovan leather, others prefer linen or even cardboard.
If you use a soft substrate, then just take note not to over-strop and round your edge.
