Q - When you are flipping the knife on the Jende JIGS 2.0 Knife Sharpener, If the two sides measured different angles, can this system be recalibrated? Over time as the cam wears can the two sides measure at different sharpening angles?
A - What I typically recommend on any rotating knife sharpening jig, is to only measure one side and try to mostly ignore the opposite side (as long as the difference in angle is not significant). I normally clamp the knife with the handle facing to my right, and always only measure the sharpening angle in this orientation. If you measure and adjust every time you flip the knife over, you end up over-adjusting and chasing a rabbit down a hole, so to say. It's best practice to always measure in one orientation alone. When swapping stones, rotate back to the same side as you started and compensate for stone thickness on this side again.
