You can lap fairly coarse (as coarse as you prefer for fast material removal), but then you should use a finer grit abrasive to condition the surface to a smoother texture. Use at least a FEPA-F 1000 grit (around about 5 micron or finer) abrasive for your last step of lapping.
You can also make it even smoother by using a nagura conditioning stone on the surface as a final step after the lapping.
That said, you shouldn't need to level it for a long time. Make sure to condition and clean it regularly though.
