There is no real specific limit to the blade height you can sharpen. It depends on many factors, including edge angle etc. As long as you securely clamp it, you can sharpen it in most cases. The maximum listed blade width refers more to the listed sharpening angle limits. If you have a really wide blade, then the maximum sharpening angle will be lower than with narrower blades, for example.
