Yes, it will work well on almost all high end kitchen knives. If you're afraid of scuff marks on your blades, simply apply a little bit if painters tape where the clamps will go on the knife before clamping.
Typically, the clamps won't scratch the blade if both knife and clamp is clean because the duralumin aluminum alloy material used in the clamps is much softer than the hardened knife steel. Note though that if there is any tiny bit of abrasive residue or steel filings/particles between the blade and the clamp when you clamp your knife, you could get scuff or scratch marks.
If you prefer not to use painters tape to protect the blade, then just make 100% sure that the knife and inside of the clamps are completely clean and clear of swarf/residue/abrasive particles.
