Can you use the k03 pro built in angle cube with this to find the angle?

Unfortunately the Axicube-i of the K03 is only designed with knives in mind, using the knife clamps. When sharpening scissors, chisels or other bladed tools by using this platform, the angle should be zero referenced in the same plane as the blade being sharpened. Your best method for this type of sharpening, is using a sharpie marker pen on the edge and adjusting the angle until you see the sharpie being completely removed by the stone. Then sharpen at this angle.
