Won't the Optimal Diamond stones be attracted to the magnets in the table?

Yes, any ferromagnetic surface such as diamond plated stones will be attracted by the magnets to some extent but it is more than manageable with most knives. If you're sharpening a very small or very narrow blade then the magnetism will interfere more.
