Atoma diamond plate cuts fast, you mentioned that a diamond plate will cut faster.

So what are some Diamond Plates that you recommend then? Other than Atoma what other diamond plates do you recommend

Atoma plates are the best, and last a long time but many of the cheaper diamond plates out there do a great job too. Some are very inexpensive, but still work well. I would suggest using a low grit (around 80-120) diamond plate for bevel setting and hard use work as necessary, followed by diamond resin or metallic diamond stones (such as these) to clean up the deep scratches. Once a knife has a new bevel set (or has chips/damage removed), you typically don't need to use the low grit diamond stone again for that specific knife. You can easily and quickly maintain and sharpen that edge in future with medium grit Archer, Centaur or similar stones.
