It's perfectly fine to use diamond or CBN stones like these on any steel, including high carbon basic alloy steels like those used in many Japanese knives.
Is it advised to avoid diamond stones for carbon steel Japanese knives? Like will these remove steel more quickly? Venev Centaur Series Dual Side Diamond [6" x 1"]
