Could a 6mm jaw opening clamp be used for knives up to as thin as 1.5mm spine?

This is not as simple an answer as you might expect. It would depend on the ratio of the width to spine thickness, and the grind type of the knife. If clamped on a flat parallel part of the blade, then it should work well when tightened enough. If the blade is not very wide, and it is full flat ground then it also might conform to the geometry of the blade but it's impossible to say for sure. It's always best to try clamp on a flat, parallel part of a blade - at least for one of the clamps.
