Yes, you can use them dry. The only disadvantage is the fact that they will load up faster with metal swarf from your blade but you can clean them off with a nylon brush and dish soap + water after use.
When they eventually load up too much after a lot of use, then I suggest using a "King Nagura" stone to condition them by rubbing the Nagura and your Venev together under running water until they are nice and clean & refreshed. You can buy a King Nagura stone on Amazon for quite cheap.
