Best CS-HD for Shirogami #1 steel (HRC 65)? Is 320 too coarse to start? Finish with 1200? Thanks

CS-HD is generally recommended up to around 63HRC, but it is not as important as the quantity of hard carbides in the steel. Shirogami #1 is a relatively basic high carbon (note - not hard carbide) steel without excessively hard carbides so it will sharpen up well; even at very high HRC levels with these stones. 320 is not too coarse, and the finest grit you stop at will depend on what you want from the edge.
