The whole milled clamps have a set geometry (milled out of a single piece of aluminum) and are more limited to the variety of knife grind shapes that it can clamp, but it is simple and easy to use.
The universal clamps can change their clamping geometry to conform to a bigger variety of blade grind geometric shapes by the addition of a clamp geometry set screw (behind the clamp tightening screw). This rear set screw opens or closes the clamp to enable more or less acute knife grind angles. It is not as simple to use as the whole milled clamps, but it does allow for more clamping options.
