Which stone to buy?
I have 4 folding knives with various steels (S35VN, 20CV, VG-10, S30V). I also have 6 kitchen knives (Miyabi and Henckles) and am unsure of the type of steel (the knives are pretty expensive around $100 each).
Im unsure which set of stones to get still, what’s your advice given I want to sharpen all of the above? I’m also looking to purchase the Hapstone R2 - I’m mostly curious about the diamond vs silicon carbide stones that can be added but open to other suggestions too. Thanks!
