Q - I have 4 folding knives with various steels (S35VN, 20CV, VG-10, S30V). I also have 6 kitchen knives (Miyabi and Henckles) and am unsure of the type of steel (the knives are pretty expensive around $100 each).
Im unsure which set of stones to get still, what’s your advice given I want to sharpen all of the above? I’m also looking to purchase the Hapstone R2 - I’m mostly curious about the diamond vs silicon carbide stones that can be added but open to other suggestions too. Thanks!
A - The Hapstone R2 is an excellent choice. The "standard" model will suit your knives well. Be sure to also get a digital angle guide, fine tuning adapter and spring stoppers.
For your knives (and possible future modern steel knives), I would strongly recommend a set of diamond resin stones. Venev Centaur, Venev Ursa or Venev Orion are all solid choices. The Edge Pro matrix stones is also a good choice.
Silicon carbide or Aluminum oxide stones won't do as well with many modern vanadium carbide steels. Some of your knives have moderate amounts of vanadium carbides and if you get any future super steel knives then diamond stones is a must have.
